NOI by Paulo Airaudo

NOI by Paulo Airaudo is a fine-dining restaurant on the fifth floor of the Four Seasons Hotel Hong Kong in Central. It serves an Italian omakase that mixes in Japanese techniques, with seafood-focused courses such as tuna belly with sea urchin and caviar, lobster, and red shrimp pasta, built closer to Japanese sashimi than to traditional Italian cooking. Before the meal, starters and drinks are served in a lounge furnished like a living room, then guests move to the main dining room, and ordering is done through the course menu. Across the courses, sauces cover the main ingredient and the seasoning runs salty.
